Here's a copy and paste of the glazed beets recipe that I had posted:

Glazed Beets with Black Mustard Seeds

I do a shortcut and start with canned shoestring beets. You can certainly start with boiled fresh beets or take canned whole beets that you then slice into wedges or strips.

1 lb canned shoestring beets drained
1/2 tsp turmeric
2 tbs light vegetable oil
1/2 tsp black mustard seeds
1 tsp salt (I don’t use any salt)
t tsp sugar

Heat the oil over high heat in large frying pan. When the oil is very hot, add the mustard seeds Keep a pan lid or splatter screen handy since the mustard seeds will pop and jump right out of the pan if they can. When the mustard seed turn gray (about 5 to 7 seconds), add the drained beets and turmeric and cook for about 1 minute, turning and tossing to coat the beets with the mustard and flavored oil. Sprinkle with the salt (if you are using) and sugar and cook for an additional minute. Turn off heat.

You can serve this hot or chilled but I always make this a day ahead and serve it chilled as a side salad. Will stay in fridge for up to 3 days after being cooked.

Goes well with just about everything but I especially like it along side of saffron rice.

I was taking resveratrol, NMN and L-arginine my pulmonologist did like me taking the L-arg. Because of nitrates and suggested beet juice instead.

We eat beets a couple of times a week...I posted an Indian cold glazed beet "salad" recipe quite a while ago in the Recipes sub-group on this site. I try to make a batch of that at least every month and get about 3 days worth out of each batch.

And due to my personal history of Cancer, I eat something in the cabbage family every day since cabbage fights quite a few forms of Cancer.

But I also may need to start taking Vitamin D as a supplement and my last blood test showed a deficiency there.

Thanks so much for your reply. I think in general most physicians don't like suppplements, but my endocrinologist who does not believe in supplements told me to take vitamin D3 because of my blood work. Have a great day!😊
